Are you overflowing in carrots from your garden or looking for new side dish recipes to try? These brown sugar glazed carrots are an absolute must-try! With a few simple ingredients, you have an easy side dish that will definitely be a new family favorite.
These could honestly qualify as a dessert because they aren’t technically the healthiest, but you only live once, right?

INGREDIENTS
- 1 lb. of carrots, diced (or shortcut with a package of baby carrots)
- 1/3 cup packed brown sugar
- 2 tbsp. of butter
- 1/4 tsp. salt
- Pepper, if desired, to taste
INSTRUCTIONS
- To a small pot, add carrots and approximately 2 cups of water (to cover). Add ≈1/4 tsp. salt, if desired. Bring to a boil and then reduce to a simmer until carrots are tender (12ish minutes)
- After the carrots are done cooking, start your glaze. Combine butter, brown sugar and salt to a small pan on medium heat. Stir constantly until sugar is dissolved. Take care not to scorch the mixture. Once it’s just combined, remove from heat.
- Strain carrots and add to glaze mixture. Put back on low/medium heat for around 5 minutes until carrots are nice and glazed.
Season the carrots with salt and pepper to taste. Enjoy!
NOTES
There is no need to peel your carrots for this recipe. Just make sure they are thoroughly cleaned!
Cook your carrots only until tender. If you overcook them, they will turn soft and mushy!
